There are lots of pretty friendly chocolatiers in London, who make deliscious chocolate trufles. Only a few of them put that extra bit of love and attention in, and only make hand made chocolates . Others go even further and refuse to put any preservatives in.
Unless you've been treated to fresh, handmade chocolate truffles , you won't quite believe the difference. Handmade chocolates mean they've had that extra bit of love and attention put in. They are not processed buy a machine that is the size of your house, but slowly made by a trained chocolatiers hands, caring about each and every chocolate truffle that is made.
Who would you rather have making your chocolates? A very expensive piece of machinery that just drains electricity and doesn't care if your chocolate tastes great, or would you prefer a human that really cares about your finished, someone who knows just how good they taste, and quite how good they can be, and most importantly exactly what to do based on years of experience, what to do intuitively if something goes wrong.
Chocolate truffles are very temperamental and no amounts of technology can tell a superb chocolate better than a highly skilled chocolatier.
The other really important part about real chocolate is learning what exactly is inside the chocolate. Buy a bar of chocolate from any high street shop (or even from some 'chocolatiers' on the high street) and you'll find ingredients such as E-numbers, or flavourings,. Trust me, real chocolate truffles doesn't contain vegetable oil.

Because they don't give a monkeys about taste, and really only care about costs. They want to sell to you the least expensive chocolates they can at the highest price they can.
Cheap oil is used instead of cocoa butter - which is naturally found in real chocolate. The very big and very rich chocolate company will have calculated that they can remove cocoa butter from chocolate, and sell that for use in cosmetics and face treatments at 5 or 10 times the price of the replacement they put back in the chocolate. So replacing cocoa butter with oil is just a way to get more profit for these big companies. Do chocolate truffles taste better with vegetable oil in? (I'll leave that to your taste buds to answer) if you aren't sure, then mix a teaspoon of vegetable oil into a bowl of cocoa Taste good? I don't think so.

Fresh, handmade chocolates taste so much better because there is less inside them, and less is better. For a similar comparison, try a victoia sponge, freshly baked by your aunt that came out of the oven a few hours ago, and compare that with a cake you purchased from a shop - like the ones that you buy in a box, with horrible packaging inside, and a ingredients list longer than the bible. I've never ever found a food which tastes better with lots of preservaites in, and I doubt you will - nothing will beat home-made fresh food, and I encourage you to find the best of any food you find - if it's bread, cakes, doughnuts or fresh chocolates.
